In 2008 my friend Jerry Schubel, CEO of the Aquarium of the Pacific asked me to come up with some creative ideas for sustainably harvested seafood. Poke was still pretty unknown on the mainland and during a trip to Hawaii I became infatuated with it and thought it would be the perfect food for a new quick service restaurant concept. I taught myself how to make really good poke, researched the restaurant business and developed a plan. But after presenting to some local restaurant owners I realized that I was getting into a business I did not want to do. So the project ended quickly, but my family and friends are always happy when i make super awesome poke!
